Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.
In a mixing bowl, combine cottage cheese, almond flour, grated parmesan cheese, garlic powder, paprika, and salt. Mix well until all ingredients are fully incorporated.
Scoop out small portions of the dough and roll them into small balls or flat discs. Flatten them gently using your fingers or a rolling pin. You can make them as thin as you like for crispier chips.
Arrange the flattened discs on the prepared baking sheet. Make sure they’re spaced apart so they bake evenly.
For extra crispness, brush the tops of the chips with olive oil or melted butter.
Bake in the preheated oven for about 12-15 minutes or until the chips turn golden brown and crispy. Keep an eye on them, as baking times may vary depending on thickness.
Remove from the oven and let the chips cool down. They will crisp up more as they cool. Serve with your favorite keto-friendly dip!
