In a bowl, combine peanut butter, sugar, and egg. Mix until smooth.
Stir in vanilla extract, baking soda, and a pinch of salt.
Fold in chocolate chips or chopped peanuts for added flavor and texture.
Scoop out tablespoon-sized portions and roll into balls.
Place on the baking sheet and flatten gently with a fork in a criss-cross pattern.
Bake for 8–10 minutes until edges are lightly golden. Don’t overbake—they firm up as they cool.
Let them cool on the baking sheet for a few minutes, then transfer to a rack. Enjoy warm or store in an airtight container.
