
Peel and blend the mango into a smooth puree. Set some aside for layering
In a bowl, mix mango puree, sugar, oil, milk and vanilla. Add flour, baking powder, and baking soda. Mix until a smooth batter.
Pour the batter into a greased baking dish. Bake at 180C for 20-25 minutes or until a toothpick comes out clan. Let it cool completely.
Once cooled, crumble the cake gently with your hands or a fork.
In clean jars or glasses, start layering: cake crumbs, mango puree, whipped cream or yogurt.
Add another layer of cake, puree and cream until the jar is full.
Top with chopped mango and a mint leaf if desired. Chill for 1-2 hours before serving.
